Balsamic Chicken Bake

    
This Recipe is SOO Simple and DELICIOUS! Also perfect for the Advocare 24day Challenge!

I used 4 large chicken breasts
1TBSP Grape seed oil
~1/2 Cup White Balsamic Vinegar (I just poured it in! )
1 cup Cherry Tomatoes (you can cut them in half for more flavor, I just put them in whole)
1/2 sweet onion
2 TBSP Garlic & Herb seasoning (sodium free)
1/2 cup of Fresh Basil or ~1/4 cup of dried basil (just add A LOT! :))

Bake at 350' for approx. 1 hour or until chicken in cooked through

I hope that you all had a wonderful Christmas and that the time with your families was blessed.

This was my second year hosting Christmas for my family and I try to be the change my family needs to live a long and healthy life! It was yet again a success!
My Christmas day menu: Grilled Chicken breasts, veggie tray, salad, cheesy potatoes (not healthy but a tradition), whole grain tortilla chips & salsa, cheese & crackers and my dad made some home made sugar free apple pies for desert!
It was wonderful a wonderful spread & everyone enjoyed it without feeling the extra guilt you normally would after way too much food on the holiday!!!  (I splurged on some of the potatoes and yes, I even had some pie!!! Everything in Moderation!!)


Now we are back to the daily Grind & M.I. Team members were back this morning!!!

Fitmas was so much fun, that you to everyone who came and did the 12rds of Fitmas and enjoyed Fitmas holiday party! It was too much fun & we will have m.i. TEAM nights more often! :)

2014 Annual Fitmas Party~!!

The time has come for our 2014 Annual FITMAS Party!!
 
This years party will be held at the Mental Image Fitness Studio with a Fun PotLuck immediately following the workout at 6pm~ this years theme is Christmas Tacos! So get your margarita cups & Santa hats ready! A dish to pass is encouraged! ;)

Here is a twist to our fun yet tough workout that incorporates the 12 days of Christmas into our "12 Rounds of Fit-mas".

12 Rounds of Fit-mas


Tis the Christmas season for that workout feelin'. First I want to say Merry Christmas and may God bless you all. Here is a fun but tough workout that incorporates the 12 days of Christmas into our "12 Rounds of Fit-mas". I have seen the 12 days of fitness workouts where you add on an exercise each day, our workout is done during a single session, you start with the 1 min plank for Round 1, Round 2 is 2 pull-ups and a 1 min plank, Round 3 is 3 Handstand Pushups, 2 pull-ups, and a 1min plank, you get the idea. The workout continues in this format and you finish when you complete the 12th Round that consists of 12 Tuck jumps, 11 Mt climbers, 10 walking lunges, 9 Squat thrusters, 8 Swiss Ball Crunches, 7 Burpees, 6 Hand Release Push-ups, 5 10 Yard Sprints, 4 Dive Bombers, 3 Handstand Push-ups, 2 Pull-ups, and a 1 min plank.

I can assure you the first 4-5 rounds may feel easy but give this workout a chance and it will give you a run for your money.

I know this is a bit late in week 3 but it will be a good one for sure...I promise!!!

It is time to dig deep and push yourself on this one. Thanksgiving is over but Christmas is right around the corner so don't quit now. We are three weeks in, working hard for this result is what we do!!!  Try to complete each exercise without stopping and don't worry about the burn, after this shocker you will be craving more or at least we were!!!

PUMPKIN!

I made some Pumpkin protein pancakes and muffins this weekend that I had to share! They were DELICIOUS and the macro's were perfect for anyone looking to fulfill those fall cravings and who love pancakes!

I hope you like them as much as I did! :)

Pumpkin Protein Pancakes
 
1/2 cup of 100% Pumpkin Puree
1/2 scoop of Vanilla Whey Isolate
3 egg whites
1/3 packet of Stevia
1tsp of cinnamon
1/4 cup of Maple Farms Sugar Free Maple Syrup
 
 
Makes ~ 1 pancake
196 calories
27g of Carbs- 25g of Protein- 1g of Fat
 
 

Pumpkin Breakfast Muffins
 
1 whole egg
3 egg whites
1/2 scoop Vanilla Whey Isolate
1/2 cup 100% Pure Pumpkin Puree
1/2 packet of stevia
1tsp cinnamon
Bake in cup cake pan at 375 degrees for ~30-35min
 
Makes ~ 6 muffins
268 calories
27g of Carbs- 31g of Protein- 6g of Fat

How are you LIVING?



I cannot wait for the release of my website mentalimagefitness.com to go live so that I can share with you all the success stories of the many lives M.I. Team is changing!! :) 


In just the last two weeks I have been faced with a lot of challenges, choices, and feelings of empowerment and failure. I know what my dream is, and I have been defining it daily for the last 4-5years.

Recently, I am sad to say I have let some people nearly break me, discourage me, and bring to the point of nearly walking away from my dream to become "normal" in their eyes. I perceived their normal to be getting a full-time job and wearing clothing that isn't workout attire.  

Telling me that what I do on a daily basis is just too hard, or too much for one person, or it’s not worth it, or that's ridiculous, or you work too much, or you’re not smart enough, or what happens when you want to have a family, whatever their opinion on what I am doing is/was so on and so forth. I nearly let them change my mind and almost let them redefine my dream.

But with the help of people who do believe in me, I have renewed my self-confidence. (Even the strong & BOLD need a shoulder to cry on and I have shed many tears through the years)

I was recently provided with a gift of a very inspiring trip where I met a lot of amazing individuals.  We all had one crazy thing in common, we all want to change lives in one way or another. I surrounded by like-minded individuals who were almost all entrepreneur's and fitness nuts, and there I was able to really discover myself even further. The trip was very empowering and I was able to bring that empowerment into many different aspects of my life in a short amount of time strengthening friendships, relationships, and DREAMS!

Being an entrepreneur takes guts, it takes a work ethic unlike any average person. It takes multiple failures and public embarrassments, it takes belief and passion, it takes love and support, and ultimately it takes a DREAM! I am fortunate enough that my dream is small enough to share with others who relate to it and live it, yet big enough to change the world, even if it is one life at a time!

I encourage you all to believe in your dream and no matter how many disappointments big or small, persevere!  I believe there are big things out there for each and every one of us- don’t be afraid to find it and fight for it!


 

As long as I am influencing lives- even if it’s one at a time in a positive way, I am changing the world! :)
